Broccoli Soup

Imagine it snowing outside, you sit cozy on your couch and watch the whitest snow flakes falling down from the sky. Radiator making it's noise whilst heating you house and a bowl of hot soup in you hands to eat. Exactly, a dream, and that is how this soup will make you feel on a cold, chill day. Very easy to make and easy to digest, good for your health. Try it with some cheese or add cheese to this soup to make it even more yummy. If you are Vegan, please use vegan cheese and soy milk. Good appetizer as well.

Prep time: 15 minutes
cook time: 40 minutes
servings: up to 6 medium bowls.

Ingredients: [All vegetables roughly chopped]

1. Broccoli frozen/fresh - 4 cup, florets
2. Celery - 4 stalks
3. Onion - 1 medium
4. Garlic - 3 to 4 pods, crushed or 2 tsp paste
5. Carrots - 1 cup,
6. Potato - 2 medium
7. Thyme dry - 1 tsp
8. Parsley dry - 2 tsp
9. Cheddar cheese - 1/2 to 1 cup, grated (optional)
10. Milk [fat free preferably] - 1/2 to 1 cup [depending on how thick you want the soup]
11. Salt - to taste
12. Pepper - 1 tsp [alter to taste]
13. Oil - 3 tsp

Method:

1. In a big vessel, heat oil on medium heat, add parsley, thyme, garlic and onions with some salt, saute for a few seconds, put the lid on the vessel and let onions get golden brown.
2. Add Celery, potato and carrots, saute and let them sweat a little by putting the lid back on.
3. Add broccoli florets saute for a few seconds and put the lid back on to make it sweat.
4. Add sufficient water to cook the vegetables. Water so much that vegetables move around freely, not drown. Let the potatoes cook and let it cool.
5. Blend the vegetables in a blender till smooth, transfer to the vessel, turn the heat back on the stove.
6. Now add sufficient salt, pepper and let it cook for 2 minutes. You can add a little water if you think it is too thick.
7. Add milk and let it cook for 2 minutes.
8. If you are using cheese, add a little first, stir it in well till it gets incorporated and repeat till you have added all the cheese. Your soup is ready to be served.

Serving suggestions:

You can serve it with any kind of bread or some cheddar cheese. You can put a few croutons in it like i have or sprinkle some grated cheese on top. 

Tips:

Be careful while adding the cheese, you would not like the soup if the cheese gets stringy, so carefully stir it in.
